Cauliflower Crust Pizza – adapted from Detoxinista
4 Cups Cauliflower Rice*
1 egg, beaten
1/3 Cup Cheese of your choice
*vegan cheese mix or cashew/pine nut cheese might be an interesting thing to try!
1/3 Cup Garbanzo Bean Flour
Sprinkle Dry Oregano
Palmfull of Fresh Cilantro, chopped
Pinch of Salt & Pepper
*Cauliflower Rice: Chop up a head of cauliflower removing tough stems. Place florets in a food processor and blend into “rice” form. You can either steam and strain or give it a quick saute in saute pan.
Mix together all ingredients until incorporated. If you do this while cauliflower is still hot, the cheese will melt nicely as well. Spread ingredients out on a well greased baking sheet (coconut oil failed me a bit) in your shape of choice. Try to create a thin crust if you like it crispier. Bake at 400 degrees for 35-40 minutes. I found that after about 30 minutes it was browned nicely, but I would have liked it crispier so definitely ignore the anxiety and let bake until crisp (or your desired doneness).
I chose to make my pizza with a homemade pesto spread, caramelized onions, sliced cherry tomatoes, shaved sweet potato (lightly sauteed to soften) and topped with extra cilantro for garnish. The best part about this meal is that although it will take quite a few minutes to cook, you can add whatever toppings you like and keep it as simple and clean or loaded and hearty as you like!
