Overnight Oats with a Honey Drizzle

After realizing that my roommate and I had not yet gone grocery shopping, I also realized breakfast would be an issue. I usually have a green smoothie, but that’s hard to do without any greens! I took a deeper look into our stock and noticed my organic steel-cut oats were virtually untouched. Then I remembered something from a previous fellow-blogger’s post: Overnight Oats!

I have to say that extra 15 minutes in the morning spent enjoying my breakfast, coffee and the morning news was amazing.

There are dozens of recipes available on Pinterest for Overnight Oats and after having checked out a few, I went the dairy free route with the following:

Overnight Oats with a Honey Drizzle

1 Cup Organic Steel Cut Oats
1 Cup Almond Milk
1/2 Tablespoon Chia Seeds
1/4 teaspoon Cinnamon
1/2 teaspoon Vanilla Extract
Pinch of Ginger

Mix together all your ingredients in a medium-large mason jar. Refrigerate overnight (10-12 hours). In the morning, add your favorite oat toppings (i.e. sunflower seeds, nuts, fresh fruit), drizzle with honey and add a dash more cinnamon. Some recipes suggest adding a bit more milk to your oats in the morning for a creamier consistency, however I found it to be just fine without it. It’s nice and chewy, sweet and completely satiating. Enjoy!

I’m looking forward to trying out more combinations as I check out more recipes. Adding peanut/almond butter is on my to-do list!
